When it comes to Jewish cheese, the only dairy kosher my old Rabbi from Yeshiva allowed was Chalav Yisroel.
Chalav Yisroel, literaly translates to the Milk of Israel.
Chalav Yisroel is a strictness in kosher supervision whereby, the entire process from the milking of the cow, is supervised by a Jew. This strictness was established at a time when the ancient Pagan societies would compromise the cows milk by mixing it with milk from a pig. This caused the milk to be not kosher and for the Jews blessings over it to be in vein.And although today the major corporations can be trusted not to mix pigs milk into their products, the place where the products are prepared still must pass a survey and site check to include every ingredient and vessel used. The usual OU dairy or Orthodox Union dairy certification does not establish a Chalav Yisroel status in most cases. In fact most OU dairy products hold a disclaimer stating that the ingredients may include chalav akoom, meaning non Jewish milk. This does not mean that their ingredients include pig milk, Heaven protect that should never happen. It only means that it was not necessarily supervised by a Jew from the time it left the cow .
With that said, all of the dairy restaurants in South Florida include kosher pizza on the menu. Half of them are Chalav Yisroel and the other half are holding by the non Jewish milk standard. Again it must be emphasized that both types of kosher milk will be accepted by many Jews. The more observant Jews, hold by Chalav Yisroel, this includes Chabad families who for the most part hold by no other standard for kosher ice cream, kosher cheese, Jewish chocolate, kosher cake and kosher cookies. The most widely used kosher cheeses are HaOlam and Schmerlling. One fantastic little kosher restaurant in Bal Harbor, North Miami Beach uses them both. Mmm Cine Cete, The way the waiter come overs and sprinkles grated kosher parmesan on your kosher fetuccini or other Italian delicacy is pampering overdrive. The caliber of these kosher dairy restaurants leaves a mouth watering memory of their kosher cuisine Miami has to offer. The menu at Cine Cete has as well a nice kosher French selection. The wine list was just a tad bit beneath impeccable even for an authentic kosher Italian restaurant, which it is. Keeping kosher with dairy is less stringent than with meat and so to with the intricacies involving the rabbinic supervision over the kosher ingredients and how they are prepared. This makes some of the guests feel more comfortable with going dairy.
